Okay, so yesterday I was hit with this HUGE craving for cheesecake. But not just any cheesecake, you know? I wanted something… extra. I saw this picture of a raspberry donut cheesecake and I was like, “Yep, I gotta make that happen.”
First, I gathered all my stuff. I already had most of the basics like cream cheese, eggs, and sugar. But I needed to run out and grab some fresh raspberries and, obviously, the donuts. I went with plain glazed because I figured that would be the best base.

The Crust
- I took about 6 of those glazed donuts and chucked them in my food processor.
- Blitzed them until they were all crumbly.
- Then, I melted some butter – I think it was like half a stick – and mixed that in with the donut crumbs.
- It got all nice and sticky, so I pressed that into the bottom of my springform pan. Boom, crust done!
The Cheesecake Filling
This part was pretty standard.
- I beat the heck out of a couple of blocks of cream cheese until it was super smooth.
- Then, I gradually added in the sugar, making sure it was all mixed in properly.
- Next, the eggs went in one at a time.
- And of course, a splash of vanilla extract, because why not?
The Raspberry Swirl
Okay, here’s where it gets fun.
- I took a bunch of those fresh raspberries and mashed them up with a fork.
- I didn’t want it totally smooth, I like some chunks in there.
- I poured about half of the cheesecake batter into the pan on top of the donut crust.
- Then I dropped spoonfuls of the mashed raspberries all over the top.
- I poured the rest of the batter on top of that, and added more raspberry spoonfuls.
- To make it look all fancy, I took a knife and swirled it all around, making sure the raspberry got nice and distributed.
Bake and Wait…
I baked it at * took a good while, like maybe an hour and 15 min? You gotta bake it until it’s just set, with a little jiggle in the middle.
The hardest part? Waiting for it to cool! I stuck it in the fridge overnight, which is torture, I know. But it’s gotta be totally chilled for the best texture.
The Final Touch
This morning, I took it out of the fridge, and, oh man, it looked amazing. I decorated the top with some more fresh raspberries and even a few mini donuts, just for kicks.
And let me tell you, it tasted even BETTER than it looked. The creamy cheesecake, the sweet raspberries, and that donut crust… Seriously, it was a party in my mouth. I’m definitely making this again!
