So, I decided to try my hand at making lemon butter biscuits. I’d seen a few recipes floating around, and they looked pretty simple, you know? Plus, I had a bunch of lemons that were about to go bad.

Getting Started
First, I grabbed all my ingredients. I’m talking flour, sugar, baking powder, salt, butter (obviously), an egg, and those lemons. I always lay everything out beforehand. Makes me feel organized, even if my kitchen usually ends up a disaster zone.
Mixing it Up
I started by whisking the dry stuff together – flour, sugar, baking powder, and a pinch of salt. Then, the fun part: cutting in the butter. I used a pastry blender thingy, but honestly, my hands work just as well. You want it to look like coarse crumbs, kinda like wet sand.
I zested one of the lemons and squeezed out the juice. The zest went straight into the dry ingredients, I tossed with fork, added milk, and just mixed everything, then add the lemon, make sure everythings got lemon on it.
Rolling and Baking
I floured my countertop – a lot, because this dough can get sticky – and rolled it out. It wasn’t perfect, more like a lumpy rectangle than a smooth circle, but hey, it’s rustic, right?
I found some cookie cutters with Christmas theme, then cut biscuit, and put these on the baking sheet.
I baked them for, like, 12-15 minutes, until they were golden brown and smelled amazing. My whole apartment smelled like lemon and butter. It was awesome.
The Finished Product
They were pretty good! Seriously, not too shabby for a first try. They were buttery, a little crumbly, and had a nice zing from the lemon. I ate, like, three of them straight off the baking sheet. No regrets.
Next time, I might add a simple glaze on top. Maybe some powdered sugar mixed with more lemon juice? We’ll see. But yeah, overall, a successful baking adventure!
